If you visit the island, there are some traditional recipes you simply must try. First and foremost, the chickpea stew (revithada). This simple yet delicious dish is slow-cooked overnight in a clay pot inside a wood-fired oven, developing a velvety texture and deep flavor. Traditionally, in Sifnos, revithada is prepared every Saturday night to be ready on Sunday morning after church service. However, due to high demand, you can now find it in many restaurants daily.
Don’t miss the slow-cooked caper salad, a distinctive dish featuring local capers, mastelo (a traditional Easter lamb dish slowly roasted in a wood oven with red wine), and, of course, chickpea fritters (revithokeftedes), which are crispy on the outside, fluffy on the inside, and packed with aromatic herbs.
It’s also worth trying the island’s special local cheeses. Gylomeni manoura is a spicy cheese, unique in its kind, aged in wine sediment. Chloromanoura is milder and buttery, while xinomizithra has a slightly tangy and creamy taste, making it perfect for fresh summer salads.
